Chocolate Ice Cream

Hi guys! I finally made chocolate ice cream! It's not that sweet. If you like dark chocolate, you will like this one!

Ingredient

  • 2 cups heavy cream

  • ¼ cup Navitas organic cacao powder

  • 6 oz Guittard chopped semisweet chocolate

  • 1 ½ cups Organic whole milk

  • ½ cup organic coconut brown sugar

  • ⅛ tsp salt

  • 3 organic egg yolks beaten

  • ½ tsp vanilla extract


Instruction

  1. Whisk together 1 cup cream and cocoa powder. Reduce heat and boil and simmer for 45 seconds while whisking constantly. After adding chocolate and whisk until smooth, put the remaining 1 cup of cream and combine. Using a fine-mesh strainer, transfer the mixture to a large bowl and set it aside.

  2. Whisk together egg yolks. In a saucepan over medium heat, whisk together milk, sugar, and sea salt. Once the milk mixture is slightly warm, add ½ cup of warm milk to the beaten egg yolks and whisk to combine and add the milk and egg mixture back into the saucepan and whisk them. Continue to cook the custard over medium heat, and stir the mixture all the time with a spatula until it thickens. Pour the custard through a strainer into the other ingredients in the bowl and combine them. Add the vanilla.

  3. After cooling the mixture in the refrigerator for at least 4 hours, put it in an ice cream maker until thick and frozen. Mine didn't take that long at all. Then transfer to an airtight container to an ice cream container and freeze for at least 6 hours.

  4. Place ice cream in a bowl and sprinkle chopped almonds on the top and enjoy!
